Remove from heat and stir in gelatin until dissolved. It helps to use a whisk. Let sit at room temperature or place in fridge until syrupy. Chop pears into small pieces. In a mixing bowl, beat cream cheese and lemon juice until smooth. Add pureed pears and mix well. Fold Cool Whip into pear mixture. Fold in cooled gelatin. Gently blend until well mixed. Pour into sprayed 9x12 baking pan. Chill in freezer for 30 minutes then transfer to fridge, or chill in fridge overnight. Cut into bars. I usually cut into thirds the long way, and fifths the short way, leaving 15 5" bars.NOTE: Try with different flavors of gelatin or fat free cool whip.
