Puree in food processor or in a blender and put in container or ziploc bag. Steam Baby Carrots for 10 minutes. Puree in food processor or in a blender, add a few tbsp of water if not creamy. put in container or ziploc bag.In a bowl, smash the avocado with the squash and carrot puree. (Smash until at the consistency you like. I like mine chuncky vs creamy and remember the more you add ingredients the more creamy it becomes so don't mash too much). Add the red onion, red bell pepper, jalapeno, cilantro, and tomatoes. Add the lime juice. Taste first because you may like it without having to add salt or pepper. Add salt and pepper to your desired tastes.Serve with sliced veggies, whole wheat crackers or with Multigrain tortilla chips.Serving size is 1/2 cup and makes about 14 servings.
