1/2 pound sweet Italian sausage , casings removed
1 cup grated Parmesan cheese
1/2 cup chopped fresh parsley leaves
2 large eggs
1 1/2 teaspoons salt
2 1/2 pounds ground beef chuck (80 percent lean)
2 cups finely chopped onion
4 cloves minced garlic
1/2 Tbsp dried oregano
1/2 tsp red pepper flakes
1/8 cup olive oil

Here is how you make Cook's Country Meatballs:

Preheat oven to 475 degrees.Pour olive oil in sauce pan and heat over medium high heat until shimmering, then add onions. Cook the onions until golden, about 10-15 minutes, then add oregano, pepper flakes, and garlic and cook until aromatic; about 30 seconds. Pour the onion mix into a large bowl.Cut the bread into 1-inch squares, put in the bowl, and then pour milk on top. Smash/mix until mixture is smooth and consistent. Add the rest of the ingredients, except for the ground beef, and mix until well-combined. Gently knead the beef into the mixture using your hands until it is completely blended in. Then form into meatballs by taking about a handful of mixture and gently rolling from one hand to the other, then placing on a baking sheet once a smooth ball is formed.
