Here is how you make Zucchini Pizza Crust:

Prehead oven to 400 degrees FShred the zucchini by hand or using a food processor fitted with the grater blade. Put the zucchini in a bowl, sprinkle with 1 tsp salt and toss with a fork. Allow to sit for 10 minutes of so and then squeeze all the excess liquid out of the zucchini. You should get a least a cup of liquid. A small ricer works very well for this or you can just take a handful at a time and squeeze it. (This process of removing liquid from a vegetable is called 'd?gorge'.) Most of the salt will be washed away by the liquid. In another bowl, mix all the dry ingredients together thoroughly, using a fork or whisk. In a separate bowl, combine the eggs and olive oil and stir until well combined. Now mix all the ingredients together. You should have a fairly stiff 'dough'. Prepare a 14" pizza pan by covering it with a round of parchment paper. Butter or oil the parchment paper. Using your hands, pat the dough out evenly over the pizza pan. It will be about 1/4 inch thick. Use the edge of your hand to go around the outside edge of the pizza, compacting it a little so there are no thin areas that might burn. Place in the oven for 20 minutes. Remove from the oven and add all your toppings. Return to the over for 15-20 minutes more, depending on how thickly you load on the toppings.
