5 Sweet potatoes, diced but with peels if boiling, whole if baking.
2 cups thinly shredded napa or savoy cabbage
3 green onions, chopped
2 Teaspoons earth balance butter substitute
1/4 cup 1% milk

Here is how you make Sweet Potato Colcannon:

I usually have a stockpile of baked sweet potatoes in my fridge, so I tend to simply chop them and warm them up with the milk before continuing with the recipe. If you don't have baked sweet potatoes around (you poor soul!) you can steam or boil them. Wash the potatoes and dice them, with their nutritious and delicious skin still on, and place in a dutch oven or other large pan. Cover with water and boil softly until a fork can easily pierce the potatoes, about 35 minutes. In the meantime, thinly slice and wash your cabbage and green onions. Take your milk and butter-sub out of the fridge to take some of the chill off before it comes in contact with the potatoes. After you've drained the potatoes, mash them with the milk, earth balance, and salt and pepper. You may want to add more or less milk or butter-- this is your dish so follow your heart! The finished product is often served with a dollop of butter on top, so keep that in mind if you want to go that route.
