Here is how you make Southern Caviar:

Pour black-eyed peas, black beans and shoepeg corn into a strainer or colander. Drain and rinse. Chop/dice all other ingredients. Mix all together in a bowl and pour italian dressing over it all. Recipe is best when chilled overnight. Serve with Tostitos baked scoops. Alternative: For more of a Tex-Mex flair, replace bell pepper with jalepenos to taste and use cilantro in place of parsley.
