16 wonton wrappers
.5 cup canned corn (no salt added variety)
.5 cup black beans (low sodium variety)
1 cup baby spinach
1 tsp minced garlic
1/8 haas avocado
1/2 tsp Trader Joe's Chili Pepper Hot Sauce
1 tbsp cilantro

For sauce:
2 tbsp nonfat greek yogurt
1 tsp Mrs. Dash Garlic and Herb
juice from 1/4 of a lime


How Do I Make Southwest Wontons?

Here is how you make Southwest Wontons:

Preheat oven to 400 degrees F. Lightly grease a cookie sheet with nonstick spray.In a pan on medium heat, add the garlic and heat until slightly golden. Add spinach and cook until wilted. Remove from heat.Put spinach, corn, beans, and hot sauce in a small food processor. Pulsate 4 or 5 times just to combine ingredients and break up the beans a bit.Put a teaspoon full of the mixture in the center of each wonton wrapper. Top with a little of the diced avocado.Moisten the edges of the wonton (or else it will not stick) and fold it in half, corner-to-corner, so it makes a triangle.Moisten one of the two long corners of the wonton triangle and pinch the two corners together to make a completed wonton. Repeat procedure for all 8 wrappers.Place wontons on the cookie sheet and bake at 400 degrees F for 10 minutes or until golden and crispy.For the sauce, whisk yogurt, lime juice, and Mrs. Dash in a bowl until combined and serve drizzled on top of the wontons or on the side.Makes two servings, 8 wontons each.Number of Servings: 2Recipe submitted by SparkPeople user KALORIE-KILLAH.
