-4 oz 1/3 less fat cream cheese, cut into cubes
-1/4 c Sargento Limited Edition New York Sharp White Cheddar shredded cheese
-1/4 C Kraft shredded Italian Three cheese
salt and white pepper to taste

Let simmer a bit while you are chopping the spinach. Add the spinach and the remaining chicken broth. Stir and cook on medium, stirring often to cook the spinach down. Add the chopped artichokes and stir well. --Turn down the heat to simmer and add the chunks of cream cheese. Stir constantly to melt and smoothe the cream cheese. Add the shredded cheeses, stirring after each one.
