Cut 3/4 of the way through the middle of each piece to create a pocket. Marinate the tofu overnight if you have the foresight - otherwise you can just dip it in the balsamic-garlic if you're impatient!Put oregano leaves and crushed garlic into each tofu pocket. Cut the feta into 6 thin slices and insert into each tofu pocket. Or just crumble and insert, whatever works. ***If you are dextrous, you can tie each tofu packet closed with a piece of fresh chives! It's doable and looks extra-fancy, and adds durability if you're bringing it to an event! But it's completely optional and it should hold together without it because of the egg whites. Mix the breading ingredients and put it on a small plate. Put the egg white on another small plate and coat each tofu piece in egg white, then coat evenly in bread crumbs. Place on a baking sheet and bake at 350 for approximately 20 minutes or until sizzling and golden!
