Here is how you make Karen's Chicken a la Corn Relish:

Take 8x8 or 9x9 baking tin (i use disposable one's), put in olive oil and heat on grill. Once heated, add chicken. Cook for appx 5 minutes on each side (until no longer pink in middle). Add corn relish & heat through (appx 4 minutes). Once corn relish heated through add stewed tomatoes and cook until heated through (appx another 3-4 minutes).
