Boil water in a large stock pot or dutch oven.add rice, salt, and 1 tbs ghee or oil. Cover and cook til all liquid is absorbed. remove from heat and set to side, still covered. in a sautee pan, heat rest of ghee or oil. add mustard seeds and urad and fry til mustard seeds turn grey and start popping, and urad turns a reddish brown. add all to rice, along with cashews, turmeric and lemon juice. stir gently til all rice is yellow. serve hot or cold, tastes great either way!Number of Servings: 6Recipe submitted by SparkPeople user SEKHMETSAT.
