Here is how you make Cucumber Kimchi:

Wash your cucumbers and cut the ends off. Slice thin and place in bowl.Slice half of a small onion into paper thin slices and place in bowl.Add the rest of the items to bowl and mix in really well.You can eat as is but it tastes much better the longer the flavors marinate. I usually leave mine on the counter for at least an hour. I do not put into the refrigerator because I don't want the sesame oil to congeal.
