Here is how you make Beet-Peach Salad:

1. Peel beets and cut into 1/2" pieces. Place in a microwave safe container with some water. Cover and cook on high for 7 minutes, or until easily pierced with a fork.2. Cut up peaches into chunks. I don't peel mine, but you could if you wanted. Place in a medium bowl.3. Add balsamic vinegar and olive oil to peaches and toss to coat.4. When beets have cooled a little add to the peaches.
