Here is how you make Asian Tofu Salad:

Sauce:Mix peanut butter and coconut milk well with a fork. Once completely incorporated mix in sweetener and garlic.Salad:The noodles smell funny but once prepared you can't even tell.Prepare the noodles by draining and rinsing them thoroughly. Then pat them dry and put them in a bowl and microwave them for 1 minute. Drain and rinse them again and pat them dry again. At this point they shouldn't smell anymore.Combine noodles with the carrots,edamame, tofu and scallion and pour sauce over the mixture.
