2 slices whole wheat bread
1 pat butter
2 1 oz slices mozzarella cheese (from skim milk)
half a roma tomato, sliced
1 mushroom, thinly sliced
half a small garlic clove, thinly sliced
.75 bell pepper, thinly sliced
pinch of parsley

Here is how you make Grilled Italian Vegetable and Cheese Sandwich:

Heat skillet. Spread the butter on one side of each slice of bread. Add one slice of cheese to the dry side of the bread. Sprinkle garlic over slice of cheese. Layer tomato slices, mushrooms, and bell pepper over cheese. Add a dash of parsley and them top with other slice of cheese and bread with dry side down. When bread is golden, flip sandwich and toast other side.
