This meatless burger was an experiment for dinner one night Pinto beans could be substituted for the black but we think the black are better in just about everything!. The grains and beans make this a more complete protein. When cooking wild rice, set aside 1c. for the freezer. I cook the dry beans as a matter of preference and cutting grocery costs, but have used canned beans, rinsed and drained when out of my cooked beans. This can be mixed up in the morning and then cooked for the evening meal. I haven't tried freezing them yet. We just reheat in the microwave though they're best eaten right away!

Here is how you make Maripat's Tex-Mex Black Bean Wild Rice Burger's:

Make's 6 burgers. MIX the Flax and water, let sit about 10 minutes to gel. In a large bowl mash the cooked beans with potato masher, until it's soft but still has a few whole beans left (for appearence). Add the flax egg, spices, corn, onions, tomato paste, and mix well. Stir in the wild rice and oats, mixing them well. Form into 6 paddies about 1 inch thick. (This can be cooked right away, but for easier handling chill for 2-8 hours. It can be mixed up in the morning or the night before). Form into 6 patties. Spray large skillet wtih cooking spray. Cook the patties about 8 minutes, flip and cook another 5 minutes or so. This is really yummy topped with cheddar cheese, salsa or sliced tomato, lettuce and red onion slice. Serve on your favorite whole grain bun. .
