Here is how you make Aloo gobi ( taken from vah re vah):

Heat oil in a pan. Add the cumin seeds. When it splutters add the asafoetida and ginger garlic paste. Add a little turmeric. In a small mortar and pestle add the green chili, chopped onions and chopped tomatoes and smash it up a little bit. The idea is to have a finely chopped or nearly minced mixture. Add this mixture into the pan and cook till the tomatoes and mixture are completely mushy and almost disappear in the mixture. Make a concoction of coriander powder, amchur powder and chili powder in water. Add this water mixture into the pan . Then add salt and finely ground kasuri methi leaves. Cook it for a while and then add the potatoes and cauliflower. Just sprinkle a little water and cover and cook the vegetables stirring in between. After the vegetables are cooked let all the water evaporate, add the coriander leaves and sprinkle the garam masala powder over the top of the vegetables.
