Here is how you make Saag aloo:

Saute onion and garlic in a tablespoon of the vegetable stock for 4-5 minutes until tender and most of the water has evaporated. Add the spices and stir in. Add the chopped potatoes, stir to cover in the spices, add the remaining stock and cook the potatoes for 15 minutes or until soft and tender. Add the chopped spinach and cook for 3-4 minutes. Stir in chopped fresh coriander (cilantro) at the end.
