Add chard stems, thyme, onion and garlic to the bacon fat and fry, stirring often, until onion and stems are soft. Add torn greens and lemon juice to the pot and stir often while greens begin to wilt, 2 or 3 minutes. If the greens start to dry, add a few tbsp water. Put the lid on the pot for a minute or two with the heat on medium just to make sure the leaves are fully wilted. Toss with walnuts & reserved bacon and season with pepper and serve.
