The potatoes will fan open in the oven and look hedgehog-like – hence the name.If you like some kick, add the crushed red pepper; if not, fine without it.I usually put garlic in every third slice of the potato – put less if you’d like them less garlicky. Or, put none at all. Again, it’ll be fine without.

Here is how you make Naomi's Baked Hedgehog Potatoes:

Preheat oven to 375FWash and dry the potatoes. Act as if you were going to cut each potato into very thin crosswise slices, but only cut 80 percent of the way through; the potatoes need to stay intact. Toss the garlic, olive oil, red pepper and a couple pinches of salt together in a small bowl. Tuck the garlic slices deep into the potato crevices and rub the outsides of the potatoes with any leftover olive oil mixture. Sprinkle the potatoes with salt and place them on a baking sheet or tuck them into a baking dish.
