Here is how you make Kathe's Awesome Low Carb Bread (Bread Machine):

Make sure that all of your ingredients, including the eggs, are at room temperature or thereabouts.Using a 2 pound capacity bread machine, combine ingredients in the order given in your bread machine manual, with the exception of the lecithin and vinegar: put those in the water before putting in the machine.Select the "2 pound loaf", "basic bread", and "medium" browning setting, if your machine asks. If you only have a one pound loaf machine, you can cut the ingredients in half. However, using my Oster if I try to make one pound loafs, the slices wind up really tiny, about half the size of a regular slice.Don't remove the bread from the pan until it's cooled. Once it's cooled, remove the bread (don't forget to take the paddle out!) and the easiest way I know how to slice is with a slicing template (you can buy plastic ones online for a few dollars) and with an electric knife. This allows you to get more uniform slices.Keep in mind that the "weird ingredients" such as vinegar, lecithin, and ginger are there to make your bread soft and rise well. If you leave them out it will not be the same. The cooking time listed is total time in the bread machine, in mine it's about 3 hours 23 minutes.Just don't use too much vinegar or ginger or you will have weird tasting bread.Enjoy!!!Serving Size: Makes 14 slices.
