Turn oven to 375?.Put the butter in a 10-inch cast-iron skillet and place it in the oven while the oven preheats. Sift the dry ingredients into one bowl, and mix the eggs, sugar (honey or syrup) and buttermilk in another. Once the oven is preheated, carefully pull the skillet from the oven, swirl so the sides get coated with the melted butter, and then pour the remaining butter into the wet ingredients. Stir well.Pour the wet ingredients into the dry and stir long until all the dry ingredients are wet (don't overmix). Pour the batter into the hot skillet and bake until lightly browned and it springs back when lightly pressed, 25 to 30 min.
