Prepare cucumbers and set aside, let drain in colander then squeeze out extra juice before mixing with other ingredients Mix all dry ingredients in one bowl and all the wet ingredients in another then mix all togetherSpray an 8x4 loaf pan with non stick baking spray and pour mixture in loaf panBake at 350 degrees for about an hour then drop temperature to about 325 degrees for an additional 15-20 minutes or until toothpick comes out dry. Remove from pan and let cool on wire rack.
