1 small Potato, peeled
1 1/2 cups Bread Flour
1 1/2 cups Unbleached All-Purpose Flour
2 teaspoons Morton Light Salt
1 tablespoon Splena (white)
1 (1/4 ounce) pack age Fast Rising Yeast
1 1/3 cups warm Potato Water (more or less)
3 tablespoons Extra-Virgin Olive Oil (divided)
2 tablespoons Rosemary
2 tablespoons Parmesan Cheese (grated)
2 tablespoons Black Olives (chopped or sliced)
Morton Light Salt (Optional), to taste

Here is how you make Black Olive Focaccia Bread:

This makes 10 good-sized servings.1. Cover POTAO with cold water in medium saucepan. Simmer until tender. Drain, reserving cooking liquid. Mash the potato.2. Let the POTATO WATER cool until warm. Then sprinkle YEAST over 1/2 cup potato water with 1 tablespoon of SUGAR, in small bowl. Let stand until ueast dessolves, about 5 minutes.3. Add 2 tablespoons of OIL tot he yeast misture.4. Using a food processor, add together FLOURS, POTATO, and SALT. Pulse 4 times.5. With the machine running slowly, pour the YEAST misture through the feed tube. 6. Add enough of the rest of the potaot water so the dough forms a ball (dough should pull away from the sides).7. Turn the dough out on floured board and knead it until smooth. Keep the dough soft.8. Pour 1/2 teaspoon of the oil into a claen bowl (reduce the amount of oil by using a spray olive oil for this). Place dough in the bowl. 9. Dough will need to rise until double in size, perhaps 30-45 minutes. (This may require more time if room is chilly (summer air condition sometimes is a problem)).10. When dough has doubled, punch it down.11. Pour 1/2 reaspoon OLIVE OILl on baking sheet (may using spray OLIVE OIL for this too) and place dough on the baking sheet.12. Gently press the dough out to 1/2 inch thickness. Pour the remaining OLIVE OIL over the dough and spread evenly.13. Using your knuckles, dimple the dough about ever 1 1/2 inches. 14. Spinkle the dough with the ROSEMARY, CHEESE, and BLACK OLIVES. 15. Place the baking sheet in a COLD OVEN. on the CENTER RACK. Place a flat pan of water on the shelf under the bread. Let the bread rise again until doubled, 20-25 minutes.16. Sprikle with SALT (optional).17. Turn on oven to 375F.18. Bake the bread for 20-25 minutes, or until browned on top.19. Remove from pan and let cool on rack. Serve warm.This can also be divided into much smaller portions and served with a flavored dipping oil.
