Here is how you make 100% White Whole Wheat Bread:

1 - Dissolve the yeast in 1/2 cup warm water.2 - Mix the flour, dry milk, salt, and vital wheat gluten in large bowl of stand mixer fixed with kneading blade.3 - Add the oil and molasses to 2 cups warm water and mix until dissolved.4 - With mixer on low speed add wet ingredients slowly and mix until combined. Turn mixer off and allow to sit for 15 minutes.5 - With mixer on medium speed knead until a smooth, elastic dough is formed, about 10 minutes.6 - Spray a clean bowl with cooking spray and place dough in it. Cover and place in warm place to rise for 1.5 hours.7 - Punch down dough. Allow to rise for 45 minutes.8 - Remove dough to a lightly floured surface and press all the air bubbles out. Divide in two and round the dough. Cover and let stand for 10 minutes until dough is relaxed. Preheat oven to 350 degrees.9 - Spray two 8"x5" loaf pans. Form each ball of dough into a loaf and place in pans. Bake for 45 minutes or until thumps when hollowed. Internal temperature of bread should be 190-200 degrees.9 - Remove from pans. Can brush with melted butter if desired for a shiny crust.
