Mix the following dry ingredients:3 1/2 cups whole wheat flour1 Tbsp, fast rising yeast1/4 cup vital wheat gluten (rounded)1/4 cup ground flax seed (rounded)slight 1/2 cup sugar (1 Tbsp less)1 Tbsp salt2 1/2 cups rolled oatmeal-add 3 1/2 cups HOT water and stir slowly-then add 1/4 cup oil and stir slowly again-sprinkle about 1 cup of whole wheat flour on your breadboard for kneading-continue adding flour (from the board) whle kneading and knead bread until smooth and elastic-preheat oven to warm and then turn it off before putting dough in the oven-let rise in the oven 1 hour (with wax paper and towel over dough).-divide dough into either 3 smaller/medium pans or 2 large bread pans (spray pans with nonstick cooking spray)-punch down in pan, flip over, tuck under and let rise another 30-60 minutes in the oven.-take pans out, preheat oven to 350 degrees-once preheated, bake the bread for 40-45 minutes (check at 40 minutes)- you can check if it's don't by popping it out of the pan onto the cooling rack and tapping the bottom of the loaf- it should sound slightly hollowOne serving = 1 sliceServing Size:?makes 2 large loaves or 3 small/medium loavesI recommend you slice the bread when it's cooled off and store what you aren't going to use in the next day or two in the freezer.
