Here is how you make Don's favorite bulgar delite:

Chop or grind chicken breast into about 1/4 in cubes. Chop green peppers and keep whites separate from green leaves in a separate bowl. Chop the peppers, I use a green and a red sweet bell about half of each. Put the chopped peppers into the bowl with the onion bottoms (chopped celery goes good also if you have some) Next finely chop cilantro stems and all and the mint then put them into the bowl with the onion tops.Place 2 cups chicken broth into a pot and add chicken along with 1 cup of uncooked bulgur, and pepper. Next add the bowl of peppers and sliced onion bottoms. Bring this to a boil for a couple min and turn down to a low simmer until most of the liquid is absorbed. Turn off and allow the bulgur to absorb the rest of the water. Sometimes I add a couple teaspoons of couscous just to make it dryer. When it's ready and still kinda hot: add the chopped cilantro, mint, and sliced green onion tops mix in and allow to rest 5 min so flavors mix. serve as a side dish or make it a meal.
