10 fresh asparagus spears, sliced in quarters the long way
1 c sliced leeks (in rounds)
1/4 c ginger in matchsticks
1 T canola or olive oil
1/3 c dried cranberries
Juice of half a lime (optional)
Salt & Pepper to taste

Heat 1t canola oil in a skillet. Add sliced leek rounds and cook on M until golden, stirring - the crisper, the better. Heat 1t canola in a skillet and cook ginger matchsticks until brown and crispy. Then heat 1t canola oil in a very large skillet. add shredded cabbage and celeriac, saute 5 min, add slivered asparagus, cook an additional 5 min. Toss with dried cranberries, crispy ginger and leeks.
