Carne frita picada (grilled beef julienned or shredded) approx. 2 oz per one plantain. The better the flavor of the meat the better the resulting empanadas.

Monterrey jack cheese, or queso fresco, o panela or mozzarella (any white cheese with good melting characteristics, if stronger cheese taste desired, I add bits of feta cheese as well)

Sesame oil or virgin olive oil sufficient to lightly coat a non-stick pan
