In a large heavy o venproof skillet, melt butter over med heat; cook onions, garlic, celery and carrots for 3min until just softened.Stir in barley, salt, pepper until well coated. Pour 2.5cups of the Chicken broth in. Cover and bake at 350 for 30min.Stir in parsley and remaining stock; sprinkle with pine nuts or slivered almonds.
