4 Cups herb-seasoned stuffing (approx. 8 oz)

Here is how you make Yellow Squash Souffle Casserole:

Place the squash and onion in a small quantity of water and cook over med-high heat until softened.Drain off excess water and put squash/onion mix in a food processor. Add sour cream, soup and poultry seasoning. Process until mixed and almost smooth.Place stuffing in a separate bowl. Pour melted butter over stuffing and stir to mix thoroughly.Combine squash mixture 3/4 of the stuffing (or more, depending on how thick or thin you like the top "crust") and pour into a casserole dish. Top with remaining stuffing, spread evenly across the top.Bake 30 minutes at 375 degrees Fahrenheit. Serves 12 as a side dish.This dish can be made ahead, making it excellent for family gatherings and other celebration meals. Stop before the final baking step and refrigerate overnight (or for longer-term storage, freeze). Thaw in the fridge if necessary, then bake, increasing baking time by 15 minutes or so.
