This recipe is always a favorite at our house. I have taken it on potlucks and received requests to please make it again at future events. I modified the original by using olive oil mayonnaise, 2% cheese and adding horseradish. You can adjust the mustard and horseradish amounts to taste without changing the calorie count much.

Here is how you make Frosted Cauliflower:

Preheat oven to 425 degreesTrim leaves and cut back stem of cauliflower and boil or steam the entire head without cutting, 12 minutes or until slightly soft.While the cauliflower is cooking mix the mayonnaise, mustard and horseradish and set asideDrain the cauliflower and set upright in a baking dishUsing the back of a large spoon or a rubber spatula "frost" the cauliflower with the mayonnaise mixture.Be sure to cover the sides all the way to the bottom.Cover with shredded cheese.Put in preheated oven until cheese has started to bubble and brown slightly - approx. 5 minutes.
