Here is how you make Cottage Cheese Dill Bread--Tassajara:

Dissolve the yeast in the warm water and add the honey. Stir in the 1 ? c. flour. Beat well with a spoon (about 100 strokes). Cover and let rise in a warm place until doubled in size, about 45 minutes. Saute the onion in oil until translucent. Set aside to cool.Add the cooled onions to the dough, along with the eggs, corn oil, cottage cheese, dill weed, and salt. Mix well to blend. Fold in up to 3 c. flour ? c. at a time, turning the bowl a quarter turn between folds. Once the dough comes away from the sides and bottom of the bowl, turn it onto a floured board. Knead for 5 minutes, adding more flour as necessary, until the dough is smooth and resilient. Place dough in a n oiled bowl, cover and let rise in a warm place until doubled in size, about 40 minutes.Punch down, let rise again until doubled.Shape into 8 rolls and 2 medium loaves and place in oiled loaf pans. Let the loaves rise 25 to 30 minutes. Preheat oven to 350 while the loaves are rising.
