1/4 cup Finely Shredded Sharp Cheddar Cheese
1 oz crumbled Feta Cheese

*Preheat oven to 425*1. Cook macaroni according to package directions. When it's almost done, turn heat to low to keep noodles hot while preparing the cheese sauce.2. Melt butter in a small saucepot. Do not let it turn brown.3. Whisk in flour until there are no lumps. This mixture should be an off-white or pale yellow color. Do not brown.4. Add milk to the flour-butter mixture. Whisk well to mix.5. Let sauce cook until it begins to thicken, about a minute or so. 6. Add the cheeses and whisk to combine.7. Drain the macaroni and add the noodles to the cheese sauce. Stir to coat noodles.8. Transfer noodles to a small oven-proof pan (I used a foil mini loaf pan)9.
