1 package (2 cups) 2% shredded cheddar cheese
1 cup Weight Watchers Mexican cheese
1 Tbsp granulated sugar (I don't recommend Splenda, but if you'd like to try it, let me know how it goes!)
1 egg
1/8 cup whole wheat flour
1/4 tsp salt (I also salt my pasta--not included in the sodium calculation, though)
Generous dash (I estimate 1/8 tsp) ground nutmeg
Equally generous dash (also about 1/8 tsp) red pepper
Tiny dash of black or white pepper, optional

Here is how you make Casserole-style Macaroni and Cheese (a healthier spin):

Preheat oven to 350.Coat a 9x13 baking dish (I use Pyrex) with non-stick cooking spray of your choice (not included in calories).Cook the pasta according to directions, drain.While the pasta's cooking, mix up all of the other ingredients except for the cheese (milk, egg, flour, salt, sugar, spices). Set aside.Put half the cooked and drained pasta into the baking dish, and sprinkle a little bit of the 2% cheese on top, then cover with the rest of the pasta.Now re-stir the milk mixture (it likes to settle), and pour over the macaroni in the pan. It should pretty much cover the macaroni. If it doesn't, you should add a bit more milk.Sprinkle the remainder of the cheese on top.Bake for 30 minutes, or the top looks cooked; then add the Weight Watchers cheese, and return to the oven for 10 minutes, or a knife inserted in the center of the pan comes out NOT looking like it's covered with milk.Number of Servings: 16Recipe submitted by SparkPeople user DYSLEXICALCAPA.
