My niece was staying with us a few days, and is only nine months old, so is still on a limited diet... she is aloud to have pasta and any kind of cheese, and so this one was a no-brainer for us! Since she's never had milk itself, none was used, we used Velveeta insead since it melts so creamy and smooth. This is the recipe for what was left over, since it is what I ate! lol

Enough Velveeta to make it creamy after melting... will want to use a little at a time and measure as you go in order to use as little as possible, because once Velveeta melts it gets really creamy.

Black or white pepper, to taste- this is just what I like, you could leave this off if you want.

1. Cook pasta according to pacakage directions to the firmness of pasta that you prefer. I like mine mushy, but I have health issues that make chewing an issue for me, most people prefer it to be al dente.2. Drain pasta, return to hot pot and slowly add in Velveeta, stirring as you do so. Once you get the consistency and creaminess you want, you are ready to put some pepper on it and eat!*I don't add salt, because there is enough sodium in the Velveeta already, but if you aren't watching your sodium intake you are welcome to... and feel free to dress it up any way you want!A serving of this should be about 1/2 a cup... how much you make will really depend on how much pasta you cook, as this can be adjusted.Number of Servings: 1Recipe submitted by SparkPeople user BETHAW75.
