Cut Chicken into 12 strips across the grain, set aside. Stir together Panko Breadcrumbs & Shredded Coconut, add salt & pepper to taste, in shallow dish. Beat egg and place in shallow dish. Place all Chicken pieces into egg mixture,. Dip chicken in Panko mixture and pat with fork to coat on all sides Set Aside.Heat coconut oil in frying pan over med-high heat. Add chicken strips and cook 2-3 minutes of each side. Drain on paper towels and keep warm in oven. Serve with stir fried veggies for main meal or with a dipping sauce as an appetizer.
