2 Tbsp cooked bacon bits

Saute the chopped bacon or salt pork in a large stock pot until 1/4 cup is rendered. Put bacon aside and add collards to pot with grease stirring to coat. Add a little water, salt, allspice and red wine vinegar to taste. Cover pot and simmer/steam for about 30 minutes on low.
