Peel the eggplant and slice it crosswise into 3/8 inch thick rounds. You should end up with about 12 slices.Sprinkle black pepper over the slices. Spread the flour on a large plate. Heat 1 Tbsp of EVOO in a large nonstick or heavy well-seasoned cast iron skillet.over med-hi heat.Turn the slices over and pat to get rid of any excess.Place the slices in the hot oil, in a single layer, and saute about 5 minutes on each side until they soften and turn golden brown. If t hey brown too quickly reduce the heat to medium.
