Reduce heat and cover, simmering for about 10 mins. Remove from heat and let sit for another 5-10 mins until all the water is absorbed and set aside. While that is cooking, add oil to a large skillet over medium-high heat. When the pan is hot, add onions and garlic and saute until translucent. Add nuts and dates and reduce heat to medium, toasting the nuts and heating the dates through. Remove from heat and add the cooked quinoa, stirring to combine all ingredients. Add parsley and stir.
