How Do I Make Suzi's Golden Rustic Garlic Mashed Taters?

Here is how you make Suzi's Golden Rustic Garlic Mashed Taters:

wash the potatoes thoroughly and cut off any undesired or damaged skin. Cut potatoes in quarters and put in a large stock pot with water to cover. Put the pot on the stove on high or medium high to cook until just fork tender. (make sure you don't overcook them as they taste better when they are firmer) When potatoes are done then scoop out a 1/4 cup of the water before draining the pot. In a large bowl put potatoes, sour cream, margarine and the water that was held aside earlier. Depending on your desired consistency use either a hand masher (more rustic) or a mixer (more whipped consistency) ( I used a stand mixer)While mashing the potatoes add the garlic and pepper. Depending on desired taste you can also add finely chopped celery to this recipe and it tastes amazing. This recipe was calculated without it though. Garnish with chives or parsley. Enjoy!Serves 8 - 1cup servings.Number of Servings: 8Recipe submitted by SparkPeople user SUZISLIMDOWN.
