1/4 cup Potato starch
1/4 cup Tapioca starch
1/2 tsp Salt
1/4 tsp Baking Powder
1/4 cup Lard
1/2 tsp Xanthan

How Do I Make Garbonzo Tortillas (gluten free)?

Here is how you make Garbonzo Tortillas (gluten free):

Combine all the dry ingredients into one large bowl and work in the lard with a fork first then get your clean hands to work it in. Add very hot water to the dry mix and knead for just a few minutes until blended into a large ball. Do not over knead! Put aside and cover leave for 15 minutes. Use extra potato starch for dusting your work surface and rolling pin, and separate the dough into 8 balls. Gently roll flat a ball then using a cast iron skillet (or non-stick pan) on med high heat (make sure pan is dry) put the flattened tortilla in the pan and cook for about 1 minute, or until it starts to bubble. Flip and repeat with remaining balls! That's it!
