How Do I Make Hummus with Pinenuts?

Here is how you make Hummus with Pinenuts:

Step 1: Roast garlic bulbs in the oven for 10-15 minutes at 220 C.How to roast garlic:- Peel the the outer papery layer off the garlic bulb until you can see the individual cloves.- Slice off the top of the garlic bulb and place each bulb on a piece of aluminium foil.-drizzle 1 tsp of olive oil on each garlic bulb and sprinkle a bit of sea salt over it.-wrap the garlic bulbs in the foil and place in the oven for 10-15 minutes depending on your oven.-when done, let them cool for 5-10 minutes. -you should be able to easily squeeze the bulbs out of their papery sleeve.Step 2: Roast and grind Pine nutsLightly roast 2 Tbs of pine nuts over medium heat in a frying pan lightly coated with baking spray (no oil needed here). When they are slightly brown, put them into a food processor or use a mortar & pestal to grind them down into a half powdery paste. Set aside.Step 3: Cook chickpeas-Pour 1 can of chickpeas with the liquid into a sauce pan over medium heat. Don't boil them. Cook for about 5 minutes then turn off the stove.-Drain the second can of chickpeas in the sink and add the contents to the pan.-Use a staff mixer and beat/grind the chickpeas down as smooth as possible.Step 4: Mix all ingredients together to make Hummus-Cut lemon in half and squeeze all the juice into the mixture, then add the ground pine nuts and roasted garlic cloves to mixture and blend again. Be sure to grind down the garlic cloves as much as possible. (Alternatively you can use a food processor. I don't like having to wash all the big equipment, so I was content using a staff mixer.)-Add a dash of paprika and some sea salt and mix it in with the mixer. Scoop into a serving bowl and serve with pita bread or raw veggies.Yields: 14 servings (50 grams) Number of Servings: 14Recipe submitted by SparkPeople user JEN1970.
