How Do I Make Lemon Curd?

Here is how you make Lemon Curd:

1. Wash and zest lemons.2. Halve lemons, then juice3. Mix egg yolks and sweeteners4. Pour in the lemon juice and add the lemon zest. Mix until well combined. 5. Place the bowl over a saucepan with simmering water. Important for water not to touch the bottom of the bowl. Stir constantly until mixture begins to thicken (8-10 minutes). 6. Take off the heat. If planning on using thickener, add to water and mix then incorporate into lemon curd mixture. 7. Add Ghee and mix until melted and well combined. You can pulse on food processor for a few seconds to smooth out mixture if it looks scrambled. 8. Place bowl with curd into a larger bowl filled with ice water and mix until the curd is chilled. 9.
