Heat a heavy bottomed pot, add the olive oil, onion, lentils, pepper, corriander and water. Bring to boil and tunr down to a simmer and cook for 30 minutes until the lentils start to soften. Add the saffron, salt and vinegar and stir. Crack the eggs and place them on top of the lentils, do not stir in. Cover and allow to cook on low for an additional 20 minutes, or until the eggs are cooked to your liking and the lentils are soft and the water absorbed.
