Preheat oven to 375 degrees. Lightly spray muffin tin with cooking spray.Sift flour, soda, powder and salt into a bowl. Stir in the corn meal and make a well in the center.Mix the Ener-G according to package directions. In a seperate bowl beat together the egg replacer with the remaining ingredients. Pour this mixture into the dry ingredients and stir until just combined.Fill the muffin cups. Bake for 15 to 20 minutes, or until toothpick inserted comes out clean.
