1 cup diced celery (1 or 2 stalks)
1 cup diced red pepper (1 medium)
1 small can tomato sauce
1 heaping teaspoon garlic
1 large sweet potato, chunked
1 jalapeno (seeded for less heat)

Here is how you make Colorful Black-eyed Peas and Greens:

Saute ham (leftovers are great for this) to liquify some fat (or use olive oil), then add onion, celery, garlic and sweet red pepper. Cook until onion and garlic translucent.
