trying to cut down on potato carbs? i LOVE potatoes and i LOVE cauliflower. i had read about mashing cauliflower (i guess to pretend it was a substitute for mashed potatoes) and it sounded horrid! but roasting adds a super flavor that makes the cauliflower almost sweet rather than the cabbagey ? flavor of it raw. so i decided to mash the two together and eat some REAL mashed potatoes! mashing just until chunky makes me feel like i'm eating something substantial rather than sucking down creamy mashed potatoes!i hope you enjoy this recipe!
