Clean Brussels sprouts, remove outer leaves, trim stems and halve. Spray cookie sheet and Brussels sprouts halves with olive oil cooking spray. Bake at 400 degrees for 20 minutes, remove and let cool.Clean and bake potatoes at 400 degrees for 40 minutes, remove and let cool.Shred Brussels sprouts and grate potatoes, skin and all.
