salt and pepper to taste

How Do I Make "Light" Garlic Parmesan Mashed Potatoes?

Here is how you make "Light" Garlic Parmesan Mashed Potatoes:

In a large pot with unsalted water, boil the potatoes until they are fork tender. Drain the water and place a dry towel over the top of the pot, let the potatoes dry out for about 2-3 minutes. Meanwhile, in a microwave safe cup or measuring cup, warm your lactaid milk (or regular %2) in the microwave for 30-60 seconds. It just needs to be warmed up, don't boil or scald. Add the milk, butter, garlic powder and s&P to the potatoes and smash with the back of your fork or a smasher. You may also use a hand blender for very fluffy potatoes. At the end sprinkle in your cheese and serve piping hot! If you dig the taste of butter substitutes you could probably use 2 tbsps of that instead.Serving Size: Makes about 4 1 cup servingsNumber of Servings: 4Recipe submitted by SparkPeople user SNACK_PACK85.
